Eggplant used to have a bad reputation, believed to cause insanity, leprosy, and cancer. For a long time it was grown purely for ornamental reasons. Now it is enjoyed in a variety of dishes. The original eggplant was white in color and shaped like an egg and grew wild in India. In Indian herbal medicine it was used as a treatment for diabetes. Eggplant is in the same family as tomatoes, potatoes, and peppers (Solanaceae).
In France and Italy it is called “aubergine”. The nutritional value of eggplant is not exceptional, but it provides calories without fat and takes on many flavors.
