KALE

Kale and collards are pretty much the same and are believed to be the first cultivated brassicas. Nutritionally, kale is one of the best things to eat. Within cultivated vegetables, it has the highest protein content and also contents high amounts of calcium, Vitamins A, C, & E. There are good amount of iron and beta-carotene as well. Unfortunately, I read in From Asparagus to Zucchini that the highest consumer in the U.S. of kale is Pizza Hut and only then to decorate the salad bar. I hope that changes soon. We actually like to add baby kale to our salad mix when possible.
Kale is a stir-fry staple but we also enjoy it creamed with tahini, soy sauce, lemon juice, salt and pepper.
