*Mashed Sweet Potatoes and carrots with sweet and sour walnuts
Bake sweet potatoes on 400 until soft. Cool and peel or scoop out the insides and place in a bowl.
Slice carrots into ½ inch thick slices.
Bring 2tbsp olive oil, 2tbsp water, carrots, and a little salt to a boil.
Reduce heat and simmer until carrots are tender (add more water if needed).
Add ¼ cup olive oil and mash carrots.
Stir in sweet potatoes. Keep warm.
Stir ½ cup honey, ½ sherry wine vinegar in a small saucepan. Add walnuts and boil until sauce is syrupy (about 10 minutes).
Add walnut-syrup mixture to carrots and potatoes, add salt and pepper to taste.
