PEAS
I knew I loved peas, but after reading about how incredibly nutritious they are, I love them even more. They contain “very good” amounts of Vitamins K, C, B1 (thiamin), A, manganese folate, and fiber As well as “good” amounts of Vitamins B2 (riboflavin), B3 (niacin), B6, protein and iron. All of these nutrients make it an excellent energy source. Peas can promote bone health, prevent the development of cancer, and reduce the build up of a molecule called homocysteine, which can contribute to osteoporosis and atherosclerosis. Snow and snap peas originated from the common field pea. Snow peas were developed in Holland in the 17th century and snap peas were only developed in the 1970’s by crossing garden peas and snow peas.
