SWEET POTATOES
Sweet potatoes are native to Central America and have been cultivated since prehistoric times, evidenced by findings in Peruvian caves dating back 10,000 years. Over 400 varieties of sweet potato are presently cultivated. They are high in potassium, carbohydrates, fiber, and vitamins A and C. Long a staple in traditional southern cuisine they can be enjoyed in a myriad of taste tantalizing dishes. One atypical and healthy way we enjoy them is to chop them into french fry size, put them in an iron skillet with olive oil and a little salt and roast them in the oven at 400. We stir them a couple times in a 20 minute time span then turn up the heat to make them crispy (be careful not to burn).
