Turnip greens are one
of the healthiest foods around. They are packed with nutrients and are
believed to prevent or heal a wide range of health conditions. The top
3 are rheumatoid arthritis, colorectal cancer, and atherosclerosis.
Turnip greens contain 661.7% of the daily recommended intake of Vitamin
K and 158.3% of the recommended Vitamin A. These greens are also high in
Vitamins C, E, and B6, folate, manganese, fiber, calcium, and copper.
The popular way to cook greens is to steam or boil them (our turnip
greens are tender enough that they do not need to be boiled), add some
oil, vinegar, lemon if you like, salt and pepper. We like to serve them
with a red wine reduction sometimes too. When harvested at a tender
age, you may just want to lightly sautee them.
