- 1 large or 2 small Kohlrabi, cut in matchsticks -1 large apple (Granny Smith if you prefer tart, otherwise Honeycrisp is great), cut in matchsticks, or shredded for a more subtle sweetness - 1/4 cup toasted pumpkin or sunflower seeds (or more...I like more :) )
Dressing: -1-2 tablespoons lemon juice and olive oil (to taste) -rind of half a lemon -about 1 tablespoon of miso paste (depending how strong the paste, I noticed there are differences depending on the brand) -1 teaspoon Dijon mustard
Mix everything for the dressing (the miso paste usually needs a little smashing), pour over the kohlrabi and apple, add toasted seeds, and salt and pepper to taste. Serve immediately (depending on the amount of lemon juice, it starts to look brownish after a few hours.. still tastes good though!)
