We almost always use more apples and ginger than the original recipe, so this recipe has been changed to reflect such. A good way to use CSA bok choy.
1 lb baby bok choy (4-6 heads) 1 to 2 peeled apples, cut into matchsticks 2 large shredded carrots 2 TBSP (ca 1/2 lemon) lemon juice 2 TBSP rice vinegar (gourmet, which has sugar & salt) 1 TBSP dark sesame oil 1 TBSP or more finely grated or julienned peeled fresh ginger Coarse salt and ground pepper
Halve bok choy lengthwise; rinse under cold water to remove grit. Cut crosswise into thin strips.
In a large bowl, mix apple, carrots, lemon juice, rice vinegar, sesame oil, and peeled fresh ginger. Add bok choy; season with salt and pepper. Toss.
